Ensure you remove the meat from the pack and bring to room temperature before cooking.
Pat dry and season with salt pepper and your choice of oils just prior to cooking on a high heat. About 5 or 6 minutes each side for a medium-rare. Leave to rest for a few minutes prior to serving.
