This cut is ‘bone in’ ribs for extra flavour; the French Trim means we remove the meat from the bone ends and scrape them clean, so your roasted rack will emerge from the oven with clean rather than burned bones.  It is tender choice of meat with a delicate flavour.

A 6 bone rack provides 2 servings, 3 ribs per person.

  • Serve with ratatouille or steamed buttered summer vegetables.
  • Sear our room temperature lamb in pan to seal, then complete the cooking in the oven for a caramelised outer layer with a pink and juicy middle.
