Farmhouse wash-rind cheese made from cows’ milk. It has a brownish-pink rind with a dusting of white mould. The cheese is girdled with a band of spruce bark and sold in a pine box. When ripe Vacherin Mont D’or is so smooth and runny it can be eaten with a spoon.
The aroma of resin from the bark girdle is absorbed by the cheese, and the taste is reminiscent of the flowers and herbs of mountain pastures. The cheese ripens in four to six weeks.
