A leg of lamb makes a superb Sunday lunch – lamb is tender and rich and when cooked right and falls off the bone in delicious strips of meat. When it is served alongside the traditional sides of crispy roast potatoes, roasted vegetables and freshly made mint sauce, it is a Sunday roast guaranteed to impress the whole family.

  • When cooking a leg of lamb, there is no need to use a marinade as the meat is tender enough as it is. Marinades can in fact, have a negative effect on the juiciness of the meat. Instead, we recommend adding a simple seasoning of just rosemary and garlic.
  • To avoid the lamb from drying out, cook the meat at a low temperature. We recommend cooking the leg of lamb at no higher temperature than 150 degrees.
  • As with a lot of meats, lamb should be left to rest for at least 20 minutes before serving. This allows time for the juices in the meat to be re-distributed throughout the lamb.
