Lamb Noisettes

1 Portion per Serving


A small round of meat, a tender medallion of lamb.  Intensely flavoursome, this is a lean cut when trimmed of fat and can be cooked simply, by searing the seasoned and oiled meat in a hot pan and finishing in the oven for 8-10 minutes.

A 190-200g portion will provide 1 serving.

  • A lemon and rosemary jus, or a minted red wine gravy will accentuate the fantastic flavours in this amazing meat.
  • Marinade in garlic, capers, rosemary, lemon zest and olive oil, wrap in parma ham to cook and serve with seasoned wilted spinach and garlic with a pinch of nutmeg for an Italian inspired meal.
  • A creamy tarragon sauce, made with onion fried in olive oil, simmered with white wine and tarragon vinegar, with cream and chicken stock added after a few minutes and simmered further with fresh tarragon added finally will really impress your diners.
