This traditionally reared excellent value joint of lamb is another favourite midweek treat.  A great tasting roast with a rich flavour enhanced by the marrow bone running through it.

Simply prepared with an oil, sea salt and pepper rub, sprinkled with minced garlic and laid on a bed of rosemary, this cut will melt in the mouth when slow roasted.

Our knuckle half shoulder of lamb weighs in at between 1.2-1.6kg and will provide 4 servings.

  • Season small cuts in the lamb with a mix of salt and pepper on the tip of a sharp knife, then embed slivers of garlic into the joint to impart a timeless flavour to your roast.
  • Rest the meat, covered in oiled tinfoil and a thick cloth for around 15 to 30 minutes before carving to allow the meat to relax, become juicier and stay warm until you are ready.
  • Towards the end of the cooking time, pop some halved sprouts sprinkled with oil and seasalt alongside the lamb for a fuss-free side dish with a sweet flavour that everyone will love.
